Description Crisp, dry, and quietly complex, La Copa Extra Seco is an extra dry vermouth built on a base of Fino sherry, giving it a saline, nutty backbone that sets it apart from the neutral wine bases used by most commercial vermouth producers. Pale and aromatic on the nose, with wormwood, dried citrus, and a whisper of cinnamon and clove. The palate is lean and dry with a clean bitter finish and just enough herbal complexity to reward attention. Over ice with soda it is an impeccable aperitif. In a Martini it is exceptional, bringing a depth and character that lifts the drink considerably. Gonzalez Byass revived the La Copa name using original recipes from their historic archives dating back to 1896, with the brand itself first registered by the house in 1884. One of the oldest and most storied names in Jerez, Gonzalez Byass brings the same rigour to this vermouth as to its celebrated sherry range. At 17% ABV and built on Palomino Fino, the Extra Seco sits at the drier, more delicate end of the vermouth category.
