Description Flinty, smoky, serious and nutty, this is an intense wine with white balsamic notes balancing lemon peel and pineapple characters. Full bodied and round, but with chiseled acidity, it should age wonderfully The grapes are handpicked and destemmed at the winery. The grapes are kept cold in 5,000 litre tanks for 24 hours before direct pressing. The must is then transferred to 500-litre French new oak barrels, where the wine ferments with wild yeasts and remains in barrel for a year. The wine is fined with bentonite and gently press-filtered before bottling. Viticulture is practicing organic- everything is done by hand and vines are not irrigated. The grapes are sourced from a west-facing single vineyard, ‘El Val’, plated at over 500 metres altitude. The vineyard has a westerly aspect. The soils are very stony clay, and the vines are over 20 years old. The climate is continental with an Atlantic influence 100% Godello Vegan friendly. 13% / 75cl
